Just call me Betty Crocker…

Last night I hosted my second successful gathering at my apartment. I feel like I should share the secret of my success because if I can do it, anyone can. Below you will find 3 easy-shmeasy *low-fat* recipes that will make the guests at your next party VERY happy!

Mexican Layered Dip

You will need a 12-inch dish for this, I have been using a glass pie dish and find that it works very nicely.

Start with spreading a can of bean dip (fat free if you can find it, but bean dip itself is actually not that high in fat per serving) across the bottom for the first layer. Next, spread 6 oz of guacamole (I buy the premade kind in the vegetable section). Then combine 2 tablespoons of reduced sodium taco seasoning with a cup of fat free sour cream and spread across for the next layer. Next, spread 1/4 cup of 2 % shredded cheese (I use the KRAFT Mexican variety pack). Then, chop one small red tomato and spread that on top of the cheese. Finish with chopped black olives. Buy some Baked Tostitos Scoops chips and start dipping!

 Salsa and Cream Cheese

All you have to do for this is mix fat free cream cheese with your favorite salsa. I prefer to mix the cream cheese with an electric mixer so it’s not as chunky with the salsa. Depending on how creamy you want the dip, you can add more or less salsa to the cream cheese. I use reduced fat wheat thins to dip with this, and it tastes so yummy!

 No Pudge! Brownies

I just stumbled upon these at the grocery store on Wednesday. You can find No Pudge at the organic end of the baking aisle. Instead of using yogurt I used unsweetened apple sauce… it makes the brownies more gooey in texture which is how I like them. The mix already has the egg in it, so all you have to do is combine the mix with 2/3 cup of applesauce and a tablespoon of vanilla extract and pop them in the oven for 34 minutes. The best part is that they are FAT FREE and soooooo tasty!
